Chicken Salad

Serves 4

Yogurt Mayonnaise Ingredients

  • 2 egg yolks
  • ½ tsp dijon mustard
  • 1 tsp lemon juice
  • ⅔ cup olive oil
  • ½ cup EasiYo Greek Style Plain 2% Yogurt
  • salt & pepper to taste

Salad Ingredients

  • 1 medium cooked chicken, meat removed, skinned and diced
  • 1 mango, peeled and sliced
  • 2 scallions, thinly sliced
  • 1 Tbsp ginger, freshly grated
  • 2 bunches bok choy, separated and washed
  • coriander leaves to garnish (optional)

Method - Yogurt Mayonnaise

  1. Place the egg yolks in a mixing bowl with the mustard and salt and pepper. Work to a smooth paste using a whisk or an electric beater (you can also use a food processor).
  2. Add the lemon juice and continue mixing until the texture is smooth again.
  3. If using a food processor or electric beater, keep the motor running and very slowly add ½ cup of the oil in a thin steady stream.  If using a whisk add the oil drop by drop.
  4. Blend in the yogurt, one tablespoon at a time and alternate with the remainder of the oil, ensuring each addition has been absorbed before adding more.
  5. Adjust seasoning to taste. Chill mixture thoroughly before serving.

    Method - Salad

    1. Chop the bok choy in to small pieces.
    2. Combine chicken, mango, spring onion, bok choy and grated ginger with the Yogurt Mayonnaise in a large bowl and gently toss.
    3. Garnish with coriander leaves and fresh chillies.
