Chicken Salad
Serves 4
Yogurt Mayonnaise Ingredients
- 2 egg yolks
- ½ tsp dijon mustard
- 1 tsp lemon juice
- ⅔ cup olive oil

½ cup EasiYo Greek Style Plain 2% Yogurt
- salt & pepper to taste
Salad Ingredients
- 1 medium cooked chicken, meat removed, skinned and diced
- 1 mango, peeled and sliced
- 2 scallions, thinly sliced
- 1 Tbsp ginger, freshly grated
- 2 bunches bok choy, separated and washed
- coriander leaves to garnish (optional)
Method - Yogurt Mayonnaise
- Place the egg yolks in a mixing bowl with the mustard and salt and pepper. Work to a smooth paste using a whisk or an electric beater (you can also use a food processor).
- Add the lemon juice and continue mixing until the texture is smooth again.
- If using a food processor or electric beater, keep the motor running and very slowly add ½ cup of the oil in a thin steady stream. If using a whisk add the oil drop by drop.
- Blend in the yogurt, one tablespoon at a time and alternate with the remainder of the oil, ensuring each addition has been absorbed before adding more.
- Adjust seasoning to taste. Chill mixture thoroughly before serving.
Method - Salad
- Chop the bok choy in to small pieces.
- Combine chicken, mango, spring onion, bok choy and grated ginger with the Yogurt Mayonnaise in a large bowl and gently toss.
- Garnish with coriander leaves and fresh chillies.
