Chocolate & Orange Cake
These fuss free orange chocolate cakes make a simple yet luxurious treat. The ganache is made from yogurt rather than cream, so you’ll feel extra good about dishing up dessert!
Ingredients
- 1 ½ cup sugar
- 2 eggs
- 1 stick butter
- 3 ounces dark chocolate, 50%
- 1 ½ tsp baking soda
- ½ cup cocoa
- 2 Tbsp orange zest
- ¾ cup milk
- ¾ cup Greek Style Plain 2% Yogurt
- 1 ⅓ cup plain flour
Chocolate ganache
- 5 ounces dark chocolate, 50% chopped
- 5 ounces Greek Style Plain 2% Yogurt
- Extra zest and chocolate to decorate
Method
To make the cakes:
- Preheat the oven to 325°F and line 12-14 medium-sized cupcake tins* with cupcake papers or baking paper.
- Melt the chocolate and butter together.
- Place the & sugar into a food processor and whizz until mixed.
- Add the cocoa, soda, flour, zest, milk & yogurt and pulse until just mixed.
- Pour in the melted butter and chocolate.
- Spoon into the prepared tins and bake for 20-25 mins.
- Test with a skewer, and once cooked through, allow to cool.
To make the ganache:
- Melt chocolate over a bowl of boiled water.
- Remove from the heat and stir in the yogurt until smooth.
- Spread over the cakes immediately and leave to set. Decorate with extra orange zest and chocolate chunks or grated chocolate.
* To create a full sized cake instead of mini cakes, line a 9" cake tin with baking paper, and alter cooking time to 50-55 minutes.
