Creamy Spaghetti Bolognese

Ingredients
  • 1 red onion, diced
  • 4 garlic cloves, chopped
  • 2 Tbsp rosemary, chopped
  • 4 rashers bacon, diced
  • 1 lb beef mince
  • 1 Tbsp red wine vinegar
  • 2 Tbsp tomato puree
  • 1 can chopped tomatoes (14.5 oz)
  • ¼ cup EasiYo Greek Style Plain 2% Yogurt
  • Salt and pepper to taste
  • 500g dried spaghetti
  • Parmesan cheese (optional)

Method

  1. Heat a dash of oil in a large saucepan. Fry the garlic, onion and rosemary for a couple of minutes before adding the bacon and mince. Season with salt and pepper and cook until the mince is lightly browned.
  2. Add the vinegar, puree and the can of tomatoes. Half fill the can with water and add to the sauce mixture then bring to a boil. Turn the heat down and simmer for 15-20 minutes.
  3. Meanwhile, bring a large pot of water with a pinch of salt to the boil and cook spaghetti according to packet instructions.
  4. Take the bolognaise off the heat and allow to stand for 5-10 minutes. Pour yogurt into a bowl and then add ½ a cup of the bolognese to the yogurt. Mix well and then pour into the remaining standing bolognese and season to taste.
  5. Drain pasta and stir into bolognese.
  6. Serve with a sprinkle of shaved parmesan cheese.
