1 cup vegetable oil for frying (canola or sunflower)
Powdered sugar to dust (optional)
Method
Whisk eggs in a deep bowl before stirring in yogurt. Add the sugar and vanilla and mix well.
Sift in flour, baking soda and salt and mix well.
The mixture should be that of a thick pancake batter but not as thick as bread dough.
Heat oil in a deep-frying pan on a medium heat. You will know when the oil is hot enough by adding a small amount of mixture and if it bubbles and floats, it is ready.
Carefully pour spoonful’s of mixture into the oil to cook. These should be flat and begin to rise immediately.
Carefully turn and fry each side until golden brown. Drain each doughnut on a paper towel.
Serve immediately with a dusting of powdered sugar or with jam and yogurt.
