Easy Yogurt Focaccia

Ingredients
  • 3 cups self rising flour
  • 2 tsp salt
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 ½ cups EasiYo Greek Style Plain 2% Yogurt
  • 1 Tbsp olive oil
  • ¼ cup pitted black olives, chopped
  • 2 Tbsp fresh rosemary, chopped

Method

  1. Preheat oven to 350°F and grease a 8 x 12 inch lipped oven tray with oil.
  2. Sift flour, salt and dried herbs into a bowl, stir to combine and make a well.
  3. Add yogurt and oil and mix until just combined. Turn dough out onto a floured surface and knead for about 2 minutes.
  4. Press dough into the prepared tray and use your finger tips to press light dimples into the dough.
  5. Press in olives and rosemary gently, brush with oil and season with salt.
  6. Bake for 30-35 minutes until golden.
  7. Allow to cool for 10 minutes before serving with butter.
