        Ingredients 
 Carrots
- 2.2 lb baby carrots
 
- 2 Tbsp olive oil
 
- 2 Tbsp runny honey
 
- 2 Tbsp thyme, chopped
 
- Salt and pepper to taste
 
Tahini yogurt
Method
- Preheat oven to 400°F and line a large tray with baking paper.
 
- Place carrots on the tray, drizzle over olive oil and season with salt and pepper. Toss well and roast for 15-20 minutes.
 
- Meanwhile, combine all tahini yogurt ingredients (except the dukkha if using), stir well, season to taste and set aside.
 
- Remove tray of carrots from oven and drizzle over honey, sprinkle with thyme and toss well.
 
- Place back in oven to roast for a further 10 minutes.
 
- Remove from oven and serve roasted carrots with a drizzle of the tahini yogurt and a sprinkle of dukkha.
