Onion Bhaji with Mint Dipping Sauce

Makes 10-12

Onion Bhaji 

  • 1 cup chickpea flour
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 1 tsp cumin seeds
  • ½ tsp chili powder (optional)
  • ½ tsp turmeric
  • ½ tsp garam masala
  • 1 tsp salt
  • 4 Tbsp water
  • 4 Tbsp EasiYo Greek Style Plain 2% Yogurt
  • 4 Tbsp coriander, chopped
  • 1 large onion, sliced
  • Cooking oil (olive, coconut or vegetable)

Mint Dipping Sauce

Method

  1. Mix together flour, garlic, ginger, spices and salt. Add water and yogurt and combine to make a thick paste.
  2. Add coriander and onion and mix to coat well.
  3. In a medium sized saucepan, heat 1-2 inches of oil at a moderate heat. To test the temperature to see if the oil is ready, gently place a small piece of batter in the oil, and if it bubbles on the surface, the oil is ready.
  4. Scoop 2 Tbsp of batter into the oil, 2-3 scoops at a time. Cook for about 30 seconds, then carefully turn over and cook for a further minute.
  5. Remove and place on a paper towel to soak up excess oil.
  6. Repeat until all onion bhaji’s are cooked.
  7. To make the dipping sauce, combine all ingredients in a blender and process until well combined. Season with salt and pepper to taste.
