Raspberry Chocolate Brownie

Ingredients
  • ½ cup butter
  • ½ cup chocolate chips, use ¼ cup for melting and ¼ for stirring in later
  • ½ cup sugar
  • ½ cup cocoa powder
  • 1 tsp vanilla essence
  • 1 cup EasiYo Greek Style Triple Berry Yogurt
  • 1 cup self-rising flour
  • ¼ tsp salt
  • 1 cup raspberries, fresh or frozen

Method

  1. Preheat oven to 350°F and line an 8 x 8 inch tin with baking paper.
  2. Melt butter and first measure of chocolate chips in a saucepan over a low heat.
  3. Pour mixture into a bowl and add sugar, cocoa powder and vanilla and stir well. Fold in yogurt to combine.
  4. Sift in flour and salt and mix together. Stir in raspberries and second measure of chocolate chips.
  5. Pour mixture into the prepared tin and bake for 25-30 minutes.
  6. Allow to cool for 10 minutes before serving with a dollop of yogurt.
