Rhubarb & White Chocolate Friands

Ingredients

  • 3.5 oz butter, melted
  • ½ cup sugar
  • 1 tsp vanilla essence
  • 2 eggs
  • ½ cup EasiYo Greek Style Plain 2% Yogurt
  • 1 ½ cups self rising flour
  • ½ cup almond flour
  • ¼ tsp salt
  • ½ cup rhubarb, cut into ½ inch pieces
  • ½ cup white chocolate chunks
  • Icing sugar to dust (optional)

Method

  1. Preheat oven to 350°F and grease a muffin or friand tin.
  2. Mix butter, sugar and vanilla until well combined. Add eggs one at a time and whisk well.
  3. Stir in yogurt and combine well. Add sifted flours and salt, mixing until just combined.
  4. Gently fold in rhubarb and chocolate into the mixture before spooning into prepared tin.
  5. Bake for 15-20 minutes.
  6. Allow to cool for 5 minutes before removing from tray.
  7. Serve with a dusting of icing sugar and dollop of EasiYo Greek Style Vanilla yogurt.
