Rhubarb & White Chocolate Friands
Ingredients
- 3.5 oz butter, melted
- ½ cup sugar
- 1 tsp vanilla essence
- 2 eggs
- ½ cup EasiYo Greek Style Plain 2% Yogurt
- 1 ½ cups self rising flour
- ½ cup almond flour
- ¼ tsp salt

½ cup rhubarb, cut into ½ inch pieces
- ½ cup white chocolate chunks
- Icing sugar to dust (optional)
Method
- Preheat oven to 350°F and grease a muffin or friand tin.
- Mix butter, sugar and vanilla until well combined. Add eggs one at a time and whisk well.
- Stir in yogurt and combine well. Add sifted flours and salt, mixing until just combined.
- Gently fold in rhubarb and chocolate into the mixture before spooning into prepared tin.
- Bake for 15-20 minutes.
- Allow to cool for 5 minutes before removing from tray.
- Serve with a dusting of icing sugar and dollop of EasiYo Greek Style Vanilla yogurt.
